Who this is for

New entrants and hospitality staff targeting cruise food & beverage ranks: Restaurant Steward, Buffet Attendant, Assistant Waiter, Bar Utility, Waiter / Waitress, Food & Beverage Attendant and Bar Waiter. Bar roles add a specialist beverage module and follow legal-age and employer rules (often 21+).

Learning outcomes

  • Prepare tables, side stations, linen, glassware and cutlery to specification
  • Follow the sequence of service and carry trays and serve food and beverages safely
  • Take, repeat and transmit orders accurately and coordinate course timing with the galley
  • Recognise dietary requests and escalate allergy information correctly
  • Handle guest requests, complaints and service recovery with courtesy and urgency
  • Maintain food hygiene, personal hygiene and service-area cleanliness
